Dahi (Curd): 1/2 cup, gaadhi (thick) aur paani nikali hui
Besan (Gram Flour): 1 bada chamach
Adrak-Lehsun Paste (Ginger-Garlic Paste): 1 chhota chamach
Lal Mirch Powder (Red Chili Powder): 1 chhota chamach
Haldi (Turmeric Powder): 1/2 chhota chamach
Garam Masala: 1/2 chhota chamach
Jeera Powder (Cumin Powder): 1/2 chhota chamach
Dhania Powder (Coriander Powder): 1/2 chhota chamach
Amchur (Dry Mango Powder): 1/2 chhota chamach (agar ho)
Sarson ka Tel (Mustard Oil): 1 chhota chamach
Namak (Salt): Swaad anusar
Pyaaz (Onion): 1, bade tukdon mein kata hua
Shimla Mirch (Capsicum): 1, bade tukdon mein kati hui
Tamatar (Tomato): 1, bade tukdon mein kata hua (optional)
Til (Sesame Seeds): 1/2 chhota chamach (optional)
Pudina Chutney (Mint Chutney): Serve karne ke liye
Banane ka Tareeka
Dahi ka Masala Taiyar Karein: Ek bade bartan mein dahi, besan, adrak-lehsun paste, saare sukhe masale (haldi, lal mirch, garam masala, jeera powder, dhania powder, amchur), namak aur sarson ka tel daal kar acchi tarah milayen.
Paneer aur Sabziyan Marinade Karein: Is marinade mein paneer ke tukde aur kati hui pyaaz, shimla mirch aur tamatar daal kar halke haathon se milayen taaki sabhi cheezon par masala acchi tarah lag jaye. Ise 20-30 minute ke liye fridge mein rakh dein.
Tandoor/Grill Ka Prayog:
Tawa/Pan Par: Ek non-stick tawa garam karein. Thoda sa tel ya ghee daalein. Paneer aur sabziyon ko skewers (seekh) par lagakar ya aise hi tawa par rakh dein. Medium-high aanch par har taraf se sunahara (golden) hone tak sekein.
Oven Mein: Oven ko 200°C par preheat karein. Paneer aur sabziyon ko skewers par lagakar baking tray par rakhein. 15-20 minute tak bake karein, ya jab tak ve achhe se pak na jayein aur thode se char (jal) na jaayein.
Serving: Jab paneer tikka taiyar ho jaye, to is par thoda chat masala aur nimbu ka ras daal kar pudina chutney aur pyaaz ke saath garma garam serve karein.
Is tarah aap ghar par hi ekdum restaurant jaisa paneer tikka bana sakte hain.
